Pasture Duck
After speaking with chefs and growers in the US and France, we selected several breeds to test on our farm and in the kitchen. It was quickly and abundantly clear that French White Muscovies were the Ducks for us. These large, active, handsome ducks are bred for full flavour and large tender breasts. They grow well in Central Texas year round and excel in converting our organically managed pasture into lean flavorful Duck meat. 100% organically fed, GMO free, and pasture raised in small groups to ensure quality and to allow for consistent rotation of their paddocks throughout the farm. They take almost twice as long to grow as more commonly raised commercial breeds, but we think you will agree they are worth waiting for… We harvest on farm every two weeks and are able to guarantee a fresh and consistent product year round. Available at markets and at the finest farm to table restaurants in Austin.
pasture Pork
Our pasture raised pigs are living under native fruit and nut trees. They root around in the woods and roam the pasture for food, and are supplemented with only 100% organic grains. To ensure that the flavour of our pork shines through, we feed a corn and soy free diet based on wheat and Barley. We raise a cross of Heritage Mangalitsa and old line Duroc breeds. Mangalitsa has long been touted as the Kobe Beef of pork, crossing this with the old American Duroc has given us a deep red, heavily marbled pork with a creamy, but not over the top, fat cap.
Our pigs’ happy, active lives, heritage Genetics, and diet combine to produce a marbled, tender chop that many of our customers feel is second to none.
Harvested monthly and hand cut on farm by Julia Poplawsky, a talented local craft butcher, our pork is available fresh monthly and frozen weekly at all of our Austin area farmers markets.
pasture Goose
Our Toulouse geese are born and bred on the farm. Like all of our animals, they are 100 percent organically fed and live outside on pasture. Geese are truly grazers and, while they do eat some grain, they really prefer a diet of fresh grass. Because of this, we raise them slowly in large, open paddocks in the spring and summer and harvest them in the fall in one large batch. Available in time for Thanksgiving and the holidays. Reservations begin November 1.
pasture Turkey
Grown from late spring through early fall, our annual flock of Nicholas Supreme broad breasted turkeys mimics the hatching season of the region’s wild turkeys. Just like their wild cousins, our turkeys thrive on fresh, green pasture and plentiful in Central Texas grasshoppers. 100% organically fed and GMO free, they are finished on organic West Texas wheat to give the full flavor of a slower grown bird raised outside in the sunshine. Harvested for Thanksgiving. Reservations begin October 1.
organic Chicken
We raise a Freedom Ranger breed of chicken on daily rotated pasture. Besides all of the fresh greens and bugs they can forage, our chickens eat a custom blended, 100% organic, GMO-free ration. Just like our turkeys, our chickens are finished on organic West Texas wheat to give them the full flavour of a slower grown bird raised outside in the sunshine. Harvested monthly year round. Available fresh every month and frozen weekly for all of our Austin farmers market locations.
